Bob’s Sausage and Peppers
Ingredient List
- 8-9 hot Italian Sausages
- 2 large green peppers and 2 large red
peppers
- Button mushrooms
- ½ large onion
- 5 cloves garlic
- large can crushed tomatoes
- Salt, black pepper, basil, oregano and
parsley
Procedure
- Chop ½ large onion in large pieced and
chop 5 cloves garlic
- Brown sausages, onion and garlic in ¼ cup
olive oil
- Add ½ tsp crushed red pepper
- Cut peppers in strips
- Cut mushrooms in half
- When sausages are browed add 1/2 cup red
wine and 1 tsp of beef bouillon, and cook 5 more minutes covered
- When sausages cooked remove from pan and
set aside
- Add another ¼ cup olive oil, remaining
onion and all peppers
- 1 tsp Salt and black pepper, 1 tbs each of
dry basil and parsley and 1 tsp dry oregano
- Cook peppers until tender than add
mushrooms
- Cut sausages into pieces ¼ inch on slight
diagonal
- Recombine everything in a large pot
- Add can of crushed tomatoes
- Cook on low heat 1 hr
Serve with Italian bread and butter
