Italian Chicken Salad

 

Ingredient list

 

·        1 large chicken

·        1 celery

·        1 large onion

·        Fresh parsley

·        3-4 cloves garlic

·        2 cans artichoke hearts

·        2 cans medium black olives

·        Olive oil and red wine vinegar

·        Salt, black pepper, dry oregano and basil

 

Procedure

 

·        Boil the chicken until fully cooked, set aside to cool then completely debone all parts

·        Cut chicken into pieces about 1 inch or so, put in fridg

·        Separate and clean celery, keep the tender center with yellow leaves cut into pieces about ¼ inch

·        Chop parsley

·        Cut artichoke hearts in two, cut olives in two

·        Chop onion and garlic

·        Assemble all ingredients in big bowl- chicken, celery, onion, artichoke hearts, olives, garlic, parsley

·        Add 1 tbs salt, 1 tbs coarsely ground black pepper, 2 cups chopped parsley, 1 tsp oregano, 1 tbs basil

·        Add 2/3 – 1 cup olive oil and ½-3/4  cup red wine vinegar

·        Mix all well, let sit overnight in fridg

·        Remove and allow to come to room temp before serving- test for salt, vinegar and oil.

 

Serving—can be eaten as first course of meal, serve with Italian bread or bread sticks
